A comment from one of the few bakers in Canada that is capable of producing bread that tastes like real French bread: “In France they use ‘soft wheat’ for their bread. I use ‘soft wheat’ imported from California. Most bakers in Canada use hard wheat from the Canadian Prairies that tastes very different.”
